Homemade spinach and blue cheese croquettes in Air fryer

Ingredients

  • Whole milk 2 glasses
  • Fresh or frozen spinach 200 g
  • Butter 75 g
  • Wheat flour 2 tablespoons
  • Blue cheese 50 g
  • Egg for wrapping the croquettes 2
  • Breadcrumbs for wrapping the croquettes

Steps

  1. To make the croquettes, the first thing we need to do is to cook the spinach for 5 minutes in salted water.
  2. Then we drain them thoroughly so that all the water runs out, leaving them for a few minutes in a colander.
  3. Once they have been drained, we put a frying pan on the heat and melt the butter.Lightly fry the spinach in the butter and add two tablespoons of flour, stirring until it is absorbed by the spinach. Then gradually add the milk, allowing the spinach to absorb it before adding more. Stir and add the milk until you obtain a green béchamel sauce that is thick enough to make croquettes.
  4. Add the blue cheese and stir so that it melts with the residual heat and is well distributed throughout the paste.
  5. Once dissolved, leave the croquette paste to rest in a bowl until it cools.
  6. To form the croquettes, on this occasion I have formed balls that we roll in beaten egg and breadcrumbs.
  7. Once formed, we can freeze the croquettes until the day we are going to fry them or fry them directly in very hot olive oil, leaving the croquettes for a couple of minutes on each side until they begin to take on a toasted colour.
  8. All that remains is to drain them on absorbent paper and take them to the table very hot.

Chef’s Recommendations

If you prefer the flavour of the spinach to be more present, you can make the recipe using a creamy spreadable cheese and it will be equally delicious. If you like the intense flavour of the cheese, you can use any strong cheese, such as Comté, cured Manchego or blue or green cheeses such as Cabrales or Roquefort.

Ingredients

  • 4 Aubergines
  • 200 g crumbled cod
  • 100 g Camembert cheese
  • Salt and pepper
  • 50 g grated cheese for gratin
  • Salt

Steps

  1. Cut the aubergines in half (the width of the aubergine, not the length) and drain, reserving the pulp for later.
  2. Cut the cheese into small cubes and set aside.
  3. Mix the aubergine pulp with the cubes of cheese and the cod, previously desalted.
  4. Cut a little off the base of the aubergines so that they stand upright.
  5. Stuff the aubergines with the mixture, pressing a little so that they are well filled.
  6. Preheat the fryer for a few minutes at 180o C and once ready, distribute the stuffed aubergines in the basket. Set the timer for about 15 minutes at 180o C.
  7. After the time is up, open the fryer and sprinkle with the grated cheese.
  8. Set the timer for another 5 minutes at 180o C.

Chef’s Recommendations

We recommend that you try several times if they don’t come out perfect the first time. Take a reference from your oil-less fryer, if it needs more or less temperature with what is specified in the recipe. Not all fryers are the same, and times may vary slightly. This recipe has been tested in an Airfryer air fryer, but you can use one from another manufacturer without any problems. You can vary the type of filling with ratatouille, tuna, rice…etc. We recommend desalting the cod beforehand.

Ingredients

  • 2 sheets of empanada dough
  • 1/2 onion
  • 1 aubergine
  • 250 g of mixed minced meat
  • 125 g of crushed natural tomato
  • Olive oil
  • Thyme
  • Salt and pepper

Steps

  1. First we are going to roast the aubergine, to do this cut it in half, make some cuts in the flesh in both directions and put it in the air fryer for 20 minutes at 180º. When it is ready, remove the flesh with a spoon, cut it a little with a knife and set it aside.
  2. Chop the onion and fry it in a frying pan with olive oil. When it starts to become transparent, add the chopped garlic clove and sauté it too. Add the minced meat, salt and pepper.
  3. Cut the empanada doughs to the size of the fryer basket. Stretch one of them over the paper, pour in all the filling and cover with the other sheet of dough.
  4. Close the edges so that the filling does not leak out. With the leftover trimmings, make strips of dough to decorate the empanada. Finally, make a hole in the centre.
  5. Preheat the fryer. If you follow the steps I indicate, you will already have it hot from roasting the aubergine.
  6. Carefully place the empanada inside the fryer basket, with the help of the paper underneath. Trim the excess paper with scissors, so that it does not burn with the resistance.
  7. Programme 20 minutes at 180º. After 10 minutes, cover with aluminium foil so that it does not burn on top. As with the foil, leave the foil well attached to the pie to prevent it from burning on the heating element.
  8. Remove the pie carefully and leave to cool.

Chef’s Recommendations

If you don’t like the aubergine filling you can skip the step and substitute it or remove it and add only the meat to the pie filling.Enjoy!
