Sponge cake with fork in Air fryer

Ingredients

  • 2 eggs
  • 70 g sugar
  • 50 g extra virgin olive oil
  • 80 g cream
  • 150 g flour
  • 1 double sachet of soda (baking soda)
  • ¼ tbsp baking powder
  • The zest of 1 lemon
  • Sugar for garnish

Steps

  1. Place the eggs and sugar in a bowl. Beat with a fork for as long as your arm can take.
  2. Incorporate the oil and mix with the fork.
  3. Add the cream and stir again with the fork.
  4. Sift in the flour twice and mix.
  5. Incorporate the double sachet of soda, the baking powder and the lemon zest and stir well.
  6. Pour the batter into a greased cake tin.
  7. Put a strip of sugar along the length of the cake batter.
  8. Preheat the air fryer to 180°C for 2 minutes.
  9. Put the pan in and set your air fryer to 170°C for 25 minutes.
  10. Remove, unmould as soon as possible and leave to cool on a rack.

Chef’s Recommendations

The strip of sugar that I explain in point 6 is used to make it open just where you want it to. Air fryers are very versatile, but as doughs, in general, have a life of their own, they can open up where you least expect them to if you don’t force them with a trick like this.The time and temperature are approximate and will depend on the model of fryer you have.
