Roast ham with pineapple glaze in Air fryer

Ingredients
- 1 piece of boned and cooked ham 900 to 1300 g
- For the pineapple glaze250 ml pineapple juice
- 110 g brown sugar (you can vary this amount to taste)
- ½ teaspoon ground cinnamon
- 3 pineapple slices
- Salt
- Optional: ¼ teaspoon ground cloves and cranberries for decoration
Steps
- Remove the ham from the fridge about two hours before cooking, so that it is at room temperature.
- Prepare the glaze by putting the pineapple juice, brown sugar, cinnamon, ground cloves and salt in a pan. Cook over medium-low heat for about twenty minutes. It should be reduced by about half. Remove from the heat.
- Mark the ham by making shallow lattice cuts.
- Lined the inside of the fryer basket with a large sheet of aluminium foil.
- With a brush dipped in the glaze, paint the ham. Wrap the foil around the ham until it is well sealed.
- Press down so that no air is left inside.
- Cook at 170 °C for about 25 minutes.
- After this time open the foil and spread the ham with more glaze, without using it all up so that some can be served on the plate.
- Close again and leave to finish cooking for a further 25 minutes.
- Remove from the fryer and collect any remaining juices on the foil.
- Place the pineapple slices on top of the ham and brush the surface with the juices.
- Cook, uncovered and at 180°C, for about 5 minutes to caramelise. Let the ham rest for a few minutes, garnish with the blueberries and serve sliced.
