Magdalicious in Air fryer

Ingredients
- 2 eggs
- 60 g. sugar, panela or brown sugar
- 50 ml mild EVOO or sunflower oil
- 80 g. whole milk (can be oat or soya milk, they are just as good)
- 1 teaspoon vanilla essence
- Grind of 1 orange
- 160 g. sifted flour
- 10 g. baking powder
- Sifted flour
- 10 g. baking powder
- Sugar for sprinkling and dark chocolate chips
- Flour tins
- Flour to sift
- 10 g. of sifted flour
- 10 g. baking powder
- Sugar for dusting and dark chocolate chips
- Metal tins and muffin papers
Steps
- The first thing to do is to put the eggs with the sugar and beat them at high speed with an electric whisk, you can also do it with a manual whisk, until the volume doubles or triples and the mixture looks pale and airy
- Next, add the oil, on one side, as well as the milk, the vanilla essence and the grated orange zest and mix.
- Pour in the flour 2 times and mix a little at a time, until you see that no flour remains.
- Place the paper moulds inside metal flan trays that will help to conduct the heat and help our cupcakes to rise.
- Using an ice cream spoon, spread the mixture in each of the moulds.
- Sprinkle half a teaspoon of sugar in each of them or chocolate chips, whichever you like best.
- Preheat the air fryer to 170º, for 5 minutes.
- Program at 170º, for 15-17 minutes or until you see that, by inserting a wooden skewer or toothpick, they come out clean. Remove from the tins, leave to cool and you have delicious muffins ready to eat.
