Air Fryer Lemon Chicken

Crispy on the outside, juicy inside, and brightened with fresh lemon — this air fryer lemon chicken is the kind of no-fuss dinner you'll put on repeat. Everything cooks in one basket over a bed of thinly sliced potatoes, so the chicken bastes in its own juices while the potatoes crisp underneath.
It's naturally lighter than pan-frying: a quick spritz of olive oil is all you need, and the air fryer does the rest in about 40 minutes. Use thighs for the juiciest result, breasts for a leaner plate, or wings if that's what's in the fridge — the method stays the same.
Ingredients
Instructions
Start the potatoes
Peel and thinly slice the potatoes and spread them across the bottom of the basket. Air fry at 375°F for 5 minutes, lightly sprayed with olive oil and a pinch of salt.
Add the chicken
Flip the potatoes so they cook evenly, then lay the chicken pieces on top, skin-side up.
Season and roast
Mix the salt, garlic powder, oregano, paprika, pepper and a little olive oil. Brush it over the chicken. Quarter the lemon and tuck the wedges between the pieces. Air fry for 15 minutes at 375°F.
Flip and finish
Turn the chicken and cook another 15 minutes at 375°F, until golden and cooked through (165°F internal). Larger pieces may need a few extra minutes.
- Pat the chicken dry before seasoning — moisture is the enemy of crispy skin.
- Don't overcrowd the basket; leave space for the hot air to circulate.
- No russets? Yukon Gold or sweet potato work great too.
Frequently asked
Can I make this with chicken breasts instead of thighs?
Yes. Breasts cook a little faster — check for 165°F at around 25–28 minutes total so they stay juicy.
Do I need to preheat the air fryer?
Not for this recipe. The potatoes get a 5-minute head start, which warms the basket before the chicken goes in.
How do I store and reheat leftovers?
Keep in an airtight container up to 3 days. Reheat at 350°F for 4–5 minutes to bring the crisp back.
Can I double the recipe?
You can, but cook in batches so nothing overlaps — crowding steams the chicken instead of crisping it.
