Leek quiche in Air fryer

Ingredients

  • 4 well washed and chopped leeks
  • 1 onion
  • 1 250 g terrine of fresh Quark cheese
  • 4 tablespoons of grated cheese
  • 4 eggs
  • 2 tablespoons of olive oil
  • Salt and pepper
  • 1 shortcrust pastry
  • 1 shortcrust pastry dough
  • .

Steps

  1. Wash the leeks and chop the white part.
  2. Cut the onion and chop.
  3. Poach the leeks together with the onion in a frying pan with a little oil.
  4. Salt and pepper and cover, if all the oil is absorbed, add a little water and finish cooking. When the leeks and onion are ready, set aside.
  5. Meanwhile, in a separate bowl, beat the eggs, add the fresh cheese and mix until you obtain a smooth cream. Then salt and add the grated cheese.
  6. Place the shortcrust pastry in a bowl and prick it with a fork to prevent it from swelling. Place the poached vegetables on top, spreading them well and add the egg mixture and other ingredients.
  7. Cover with aluminium foil.
  8. Preheat the fryer to 180ºC.
  9. Place the pan in the basket and set the timer for about 25 minutes at 180ºC.
  10. If it does not all fit in the same pan, you can do it in two stages.
  11. Pinch with a stick to check that it is cooked correctly.

Chef’s Recommendations

We recommend that you try several times if it doesn’t come out perfectly the first time. Take a reference of your oil-less fryer, if it needs more or less temperature with what is specified in the recipe. Not all fryers are the same, and times may vary slightly. This recipe has been tested in an Airfryer air fryer, but you can use one from another manufacturer without any problems. You can substitute any seasonal vegetable for the leeks. Pierce the centre if it comes out dry it is ready, if not leave it a few minutes longer.
