  1. Clean the potatoes well under the tap and prick them with a knife.

  2. Put them in a microwave tray with a little water in the base and cover them with cling film. Microwave at max power for 7-10 minutes (not too hard but not too soft).

  3. Dry and cut into wedges that are not too thick.

  4. Mix the oil with the other ingredients (quantities to taste).

  5. Stir fry the potatoes with the dressing (I used a silicone pastry brush).
