Air Fryer Ham Croquettes

Creamy on the inside, golden and crunchy outside — these air fryer ham croquettes give you the Spanish tapas classic with far less oil than deep-frying. A rich béchamel studded with Serrano ham is the heart of every bite.
The filling takes a little patience (and chilling time), but the air fryer makes the frying step clean and easy. Make a big batch and freeze some for later.
Ingredients
Instructions
Make the béchamel
Melt the butter, stir in the flour and cook 2 minutes. Gradually whisk in the warm milk until smooth and thick. Season with salt, pepper and nutmeg, then stir in the ham and cook a few minutes.
Chill
Spread the dough in a dish, cover with plastic touching the surface, and chill until cold and firm (at least 2 hours).
Shape & coat
Form the cold dough into logs, dip in beaten egg, then coat in breadcrumbs.
Air fry
Spray with oil and air fry at 390°F for about 10–12 minutes, turning halfway, until golden and crisp.
- The colder the dough, the easier it is to shape — don't rush the chill.
- Spray the breaded croquettes well so they brown.
- Freeze breaded croquettes and air fry from frozen, adding a few minutes.
Frequently asked
How long do croquettes take in the air fryer?
About 10–12 minutes at 390°F, turning once, until golden and crisp.
Can I air fry frozen croquettes?
Yes — air fry from frozen at 390°F for about 14–16 minutes. No need to thaw.
Why did my croquettes burst open?
The dough was too warm or the coating had gaps. Chill well and make sure they're fully breaded.
