Why Isn't My Food Crispy in the Air Fryer?

Updated October 2026· 6 min read

An air fryer can deliver amazing crunch, but only if a few basics are right. If your fries come out limp or your chicken skin is rubbery, one of a handful of common issues is almost always the cause.

Here are the reasons food doesn't crisp and a simple fix for each.

1. The basket is overcrowded

This is the number one culprit. Air fryers crisp food by circulating hot air around every surface. When food is piled up, the air can't reach it and the pieces steam each other instead.

Fix: cook in a single layer with a little space between pieces, and work in batches if needed. A slightly smaller batch cooks faster and crisper than a full basket.

Think of the basket like a crowded dance floor: if everyone is packed together, nobody has room to move. Even a basket that looks full but has gaps may be too much. As a guide, fill it no more than halfway for small items like fries and nuggets, so air can reach every surface.

2. The food is wet

Moisture on the surface turns to steam before it can brown. This happens with fresh potatoes, marinated meat, thawed chicken and washed vegetables.

Fix: pat food very dry with paper towels. Soak cut potatoes in water for 30 minutes to remove surface starch, then dry them thoroughly. Drain marinades well.

3. Not enough (or the wrong) oil

A thin film of oil helps heat transfer and promotes browning. Too little leaves food dry and pale, while too much can make it greasy.

Fix: toss food with about 1 to 2 teaspoons of a high-smoke-point oil per serving, or mist it lightly with a refillable sprayer. Avoid aerosol sprays, which can damage non-stick coatings. See our guide to the best oil for air frying.

Foods that benefit most from oil are fresh potatoes, vegetables, breaded items and lean proteins like chicken breast. Foods that are already fatty, such as bacon, sausages and chicken skin, usually don't need any. If your breaded chicken has pale patches, that's often a sign the coating needed a light spray.

4. The temperature is too low

Low heat dries food out before it can brown, producing a tough rather than crunchy surface.

Fix: use 375°F to 400°F for most crispy foods and preheat for 2 to 3 minutes. Finish potatoes, breaded foods and skin-on poultry at 400°F for the last few minutes.

5. You're not shaking or flipping

Food in contact with the basket or other pieces browns unevenly.

Fix: shake the basket or flip food halfway, and again toward the end for fries and small pieces.

For small items, shake the basket two or three times during cooking. For larger items like chicken thighs, flip once at the halfway point. If you have a model with a rack or a dual basket, rotate the position of the food partway through so no area is shaded from the airflow.

6. Other common causes

A few more things to check:

Finally, consider your appliance. A very low-wattage or large-capacity model may need slightly more time, and an old basket with worn non-stick or heavy grease buildup can interfere with browning. A quick clean and a small increase in temperature often solve the problem.

FAQ

Why are my air fryer fries soggy?

Usually overcrowding, wet potatoes or too low a temperature. Soak and dry them, use a single layer and finish at 400°F.

Why is my breading falling off?

Press the coating on firmly, let breaded food rest for a few minutes, and avoid overcrowding.

Do I need to add oil to make food crispy?

A little helps most fresh foods brown. Fatty or pre-fried foods often don't need any.

Can I crisp up soggy food again?

Yes. Reheat it in a single layer at 375°F for 3 to 5 minutes.
