Cool potato omelette in Air fryer

Ingredients
- 5 potatoes
- 1 tablespoon of oil
- Salt to taste
- 6 eggs Optional onion or any other vegetable you like (green pepper, courgette, etc.)
Steps
- Peel and chop the potatoes (if you cut them finely it helps the cooking process)
- Wash them well to remove the starch.
- In a bowl add a tablespoon of oil and mix with the potatoes (if you have an oil spray it will make it easier)
- Put the potatoes in the air fryer at 180° for 30 minutes. If your fryer has a potato programme, make the most of it.
- Stir every 5-10 minutes to cook them evenly.
- Beat the eggs, in this case I used 6 (but you can use more or less depending on the amount of potatoes)
- Add salt.
- When the potatoes are ready, take them out (you’ll know they’re ready because they’ll be crumbly and juicy)
- Add the beaten egg.
- Move the potato and egg mixture into the fryer at 140° for 6-8 minutes. Pour the omelette onto a plate and prepare to enjoy.
