Chicken curry in Air fryer

Ingredients

  • 2 chicken breasts
  • 1 onion
  • 2 cloves garlic
  • 30 g homemade fried tomato
  • 1 tbsp curry
  • 1/2 tbsp Ras el Hanout (Optional)
  • 250 ml coconut milk
  • Salt
  • Fresh parsley
  • Olive oil
  • .

Steps

  1. Wash and cut the chicken breast into squares.
  2. Place a reusable mould in the air fryer and add the chicken breasts with a pinch of salt and spray with oil.
  3. Cook in the air fryer at 200º for 6 minutes.
  4. Peel and finely chop the garlic and onion.
  5. Remove the chicken to a plate and add the vegetables to the same pan with a pinch of salt and oil.
  6. Cook at 180º for 6 minutes.
  7. Stir halfway through to cook evenly.
  8. Add the fried tomato and cook for another minute or two.
  9. In a bowl, add the coconut milk with the curry and Ras el Hanaout and stir until dissolved.
  10. Add the chicken and coconut milk to the pan and mix.
  11. Cook in the air fryer at 180º for 6 minutes.
  12. Stir a couple of times during cooking.
  13. Chop the parsley finely and sprinkle it over the top of the dish.
  14. And now we have our chicken curry recipe ready.

You can pre-marinate the chicken with curry, parsley, garlic and oil for extra flavour.It is important to stir constantly every time you cook this recipe.You can use a little cornstarch dissolved in the milk for a thicker sauce.The parsley is decorative and you can also add cooked basmati rice for a spectacular result.
