Beetroot and potatoes in Air fryer

  • 4 small potatoes, about 180g each, peeled
  • 2 small sweet potatoes, about 180g each, peeled
  • 2 small beets, about 120g each, scrubbed
  • 2 tbsp olive oil
  • 1/4 cup grated or shredded asiago cheese
  • 1 tsp kosher salt
  • 1/4 tsp onion powder
  • Pinch of cracked black pepper
  • 2 tbsp dill, finely chopped
  • Sour cream, to serve, optional.


  1. Cut potatoes, sweet potatoes and beets 3/4 of the way into 1/2-inch slices so that the bottoms remain intact. Do NOT cut the slices all the way through.
  2. If the cut vegetables are not easy to fan in your hands, trim the bottoms so the cuts remain intact but the bottoms become thinner.
  3. Brush each with a generous amount of olive oil and sprinkle with salt, onion powder and pepper. Transfer half to the tray inside the fryer basket in a single layer.
  4. Insert the basket into the air fryer. Set the fryer to 200°C and 25 minutes. Press start.
  5. Check the vegetables after 20 minutes. If crisp, brush with more oil and resume cooking. During the last 2 minutes of cooking, sprinkle with cheese and cook for the remaining time.
  6. When the cheese has melted, transfer to a serving plate and sprinkle with fresh dill. If desired, serve with sour cream. Repeat with remaining vegetables.
  7. Served with sour cream, if desired.

Chef’s Recommendations

We recommend that you try several times if it doesn’t come out perfectly the first time. Take a reference of your oil-less fryer, if it needs more or less temperature with what is specified in the recipe. Not all fryers are the same, and times may vary slightly. This recipe has been tested in a Sogo air fryer, but you can use another manufacturer’s air fryer without any problems.
