Ingredients
- One large aubergine or two half aubergines
- Salt, pepper
- One egg, flour, breadcrumbs
- Grated cheese
Steps
- Wash the aubergine and cut into finger-thick slices.
- Season with salt and pepper and leave to stand
- To coat in breadcrumbs, dredge in flour, then in egg and finally in breadcrumbs.
- Place in the fryer basket with a silicone mould, spray with oil and cook at 200 degrees for 10 minutes.
- Carefully flip over and replay for a further 8 minutes.
- Check that they are well browned and if necessary, add a few more minutes.
- Now it is time to cover each slice of aubergine with a mound of cheese and put it back in the oven at 200 degrees for 5 minutes.
- Now all that remains is to enjoy the dish as a main course or as a side dish.
