Crispy medallions in Air fryer

Enjoy this recipe on how to make Crispy medallions in an air fryer. A different, simple, fun and very, very tasty recipe.

Ingredients

  • 500g turkey tenderloin in medallions
  • 2 eggs
  • 50g cornflakes (Kellogg’s type without sugar)
  • Extra virgin olive oil
  • Salt
  • For the sauce: 3 parts ketchup
  • 2 parts Modena balsamic vinegar
  • 1/2 teaspoon ground garlic powder
  • .

Steps

  1. Pour the cereals into a bag, and crush them with a rolling pin or a chopping board (placing it on top of the cereals and pressing down).
  2. Beat the eggs in a plate or bowl.
  3. One by one, dip the turkey medallions into the egg and cereals, and place them on a plate without crowding.
  4. Add fine salt to the battered medallions.
  5. Spray the turkey medallions with olive oil spray.
  6. Preheat the air fryer to 185°C.
  7. Cook the medallions in the air fryer for 15 minutes at 185°C without crowding (in two batches, if necessary).
  8. Remove to a plate and get ready to enjoy them juicy and crispy.
