Crispy medallions in Air fryer

Ingredients
- 500g turkey tenderloin in medallions
- 2 eggs
- 50g cornflakes (Kellogg’s type without sugar)
- Extra virgin olive oil
- Salt
- For the sauce: 3 parts ketchup
- 2 parts Modena balsamic vinegar
- 1/2 teaspoon ground garlic powder .
Steps
- Pour the cereals into a bag, and crush them with a rolling pin or a chopping board (placing it on top of the cereals and pressing down).
- Beat the eggs in a plate or bowl.
- One by one, dip the turkey medallions into the egg and cereals, and place them on a plate without crowding.
- Add fine salt to the battered medallions.
- Spray the turkey medallions with olive oil spray.
- Preheat the air fryer to 185°C.
- Cook the medallions in the air fryer for 15 minutes at 185°C without crowding (in two batches, if necessary). Remove to a plate and get ready to enjoy them juicy and crispy.
