Air Fryer Chicken Croquettes

Creamy chicken croquettes with a golden, crunchy crust — the Spanish tapas favorite made lighter in the air fryer. A silky béchamel studded with sautéed chicken, onion and garlic is the heart of every bite.
The filling needs chilling time, but the air fryer makes the frying step clean and oil-free. A perfect way to turn leftover chicken into something special.
Ingredients
Instructions
Cook the chicken
Sauté the onion and garlic in a little oil until soft, add the chopped chicken and cook through. Season with nutmeg, salt and pepper.
Make the béchamel
Melt the butter, stir in the flour and cook 2 minutes, then whisk in the milk gradually until thick. Stir in the chicken mixture and cook a few minutes.
Chill
Spread the dough in a dish, cover, and chill until firm (at least 2 hours).
Shape & air fry
Form croquettes, coat in beaten egg then breadcrumbs, spray with oil, and air fry at 400°F for about 10–12 minutes, turning halfway, until golden.
- The colder and firmer the dough, the easier it shapes.
- Spray the breaded croquettes well so they brown.
- Freeze extras and air fry from frozen, adding a few minutes.
Frequently asked
How long do chicken croquettes take in the air fryer?
About 10–12 minutes at 400°F, turning once, until golden and crisp.
Can I use rotisserie or leftover chicken?
Yes — it's a great use for leftovers. Just shred it finely and fold it into the béchamel.
Why did my croquettes burst?
The dough was too warm or under-breaded. Chill well and coat them fully.
