Aubergine Escalope in Air fryer

Ingredients
- 1 egg, beaten
- 15 ml milk
- 112 g Italian-style breadcrumbs
- 3 g salt
- 1 g black pepper
- 1 Japanese aubergine, cut into 13 mm thick slices
- 60 g all-purpose flour
- Olive oil, for brushing .
Steps
- Beat the egg and milk in a shallow dish.
- Combine the breadcrumbs, salt and pepper in a separate dish.
- Cut the aubergine into 13 mm thick slices.
- Coat the aubergine slices in flour, then dip them in egg and roll in breadcrumbs. Dip them in egg and breadcrumbs again.
- Turn on your oil-less fryer and preheat to 175°C
- Brush each side of the aubergine slices with olive oil.
- Place the breaded aubergine in the preheated air fryer in a single layer and cook at 205°C for 8 minutes. You may need to work in batches.
