Crab croquettes in Air fryer

Ingredients
- 450 gr. of crab meat
- 2 beaten egg whites
- 1 tbsp. olive oil
- ¼ cup finely chopped red onion
- ¼ red pepper, finely chopped
- 2 tbsp. celery, finely chopped
- ¼ tsp. tarragon, finely chopped
- ¼ teaspoon chives, finely chopped
- ½ teaspoon parsley, finely chopped
- ½ teaspoon cayenne pepper
- ¼ cup mayonnaise
- ¼ cup sour cream
- 3 beaten eggs
- 1 cup plain flour.
- 1 cup Panko breadcrumbs (or coarse breadcrumbs)
- 1 teaspoon olive oil
- ½ teaspoon salt .
Steps
- 1. In a small wok, sauté onions, peppers and celery over medium-high heat in olive oil. Sauté until the vegetables are translucent, 4-5 minutes. Remove from heat and allow to cool.
- In a food processor, mix the panko, olive oil and salt to a fine crumb. Combine the remaining ingredients with the vegetables in a large bowl: crab meat, egg whites, mayonnaise, sour cream, and spices. And in three separate bowls prepare the flour, eggs and panko mixture.
- Preheat the air fryer to 200°C. Mould the crab mixture into golf ball sized balls, roll each one in flour, egg and finally the panko. Squeeze the croquettes to make the batter adhere. Place the croquettes in the basket, taking care not to crowd too many. Cook each batch 8-10 minutes or until golden brown.
