  • ½ teaspoon parsley, finely chopped
  • ½ teaspoon cayenne pepper
  • ¼ cup mayonnaise

  1. 1. In a small wok, sauté onions, peppers and celery over medium-high heat in olive oil. Sauté until the vegetables are translucent, 4-5 minutes. Remove from heat and allow to cool.
  2. In a food processor, mix the panko, olive oil and salt to a fine crumb. Combine the remaining ingredients with the vegetables in a large bowl: crab meat, egg whites, mayonnaise, sour cream, and spices. And in three separate bowls prepare the flour, eggs and panko mixture.
  3. Preheat the air fryer to 200°C. Mould the crab mixture into golf ball sized balls, roll each one in flour, egg and finally the panko. Squeeze the croquettes to make the batter adhere. Place the croquettes in the basket, taking care not to crowd too many.
  4. Cook each batch 8-10 minutes or until golden brown.

Chef’s Recommendations

We recommend that you try several times if they don’t come out perfect the first time. Take a reference from your oil-less fryer, if it needs more or less temperature with what is specified in the recipe. Not all fryers are the same, and times may vary slightly. This recipe has been tested in a Nevir air fryer, but you can use another manufacturer’s air fryer without any problems.
